When she ain’t that cute but has a great personality….. aka all chicken salad ever made in the history of chicken salad 🤷‍♀️. You truly just can’t make this stuff look all that aesthetically pleasing. But trust me folks when I say this Thai Peanut Chicken Salad may just be the best chicken salad I’ve ever had!

I am personally a huge sucker for a peanut sauce and would eat it on just about anything (certainly helps out my “peanut butter is good on everything” theory). And this peanut sauce is no exception! Fresh, creamy, and just the perfect amount of spice!

To make this Chicken Salad you will need:

  • chicken, shredded
  • matchstick carrots 
  • purple cabbage 
  • red bell pepper
  • peanuts for topping (optional)
  • peanut butter
  • lime
  • soy sauce (I use gluten free)
  • sriracha
  • rice wine vinegar
  • honey

Description

A fun Thai twist on chicken salad with the most delicious peanut sauce! You’re going to love this Thai Peanut Chicken Salad!

Ingredients

  • 2 lb chicken, shredded
  • 1 cup matchstick carrots 
  • 1 cup shredded purple cabbage 
  • 1 red bell pepper, thinly sliced 
  • peanuts for topping (optional)

For the Sauce:

  • 1/3 cup creamy peanut butter 
  • juice from 1 lime
  • 1 tbsp rice wine vinegar 
  • 1 tbsp honey 
  • 2 tbsp water 
  • 2 tbsp soy sauce
  • 1 tbsp sriracha 

Instructions

  1. Whisk together all of the ingredients in a small bowl and set aside.
  2. In a larger bowl combine the chicken, carrots, cabbage, and bell pepper.
  3. Pour the sauce over the chicken mixture and fully combine. (if the chicken was hot, I would let it chill in the fridge before serving)
  4. Sprinkle with peanuts (optional) and serve.

Notes

  1. I enjoyed my chicken salad on giant lettuce cups but there’s so many ways you could eat it! On a salad, sandwich, toast, with crackers, sweet potato toast, by itself, you do you!
  2. You can cook the chicken any way you want! Bake, poach, slow cooker, whatever works for you. Or make it even easier and just buy a pre-cooked rotisserie chicken from the grocery. Shred it up and you’re good to go.

    Great looking salad there. I am pre-diabetic, and have had to cut back considerably on my sugar intake. Love this
