Sometimes you just could use a blondie in your life, you know what I mean? Especially when it’s a thick and chewy blondie full of plenty of peanut butter and lots of chocolate chips. Delicious!

The Best Peanut Butter Blondies

The Best Peanut Butter Blondies that are easy, healthy, and gluten-free. Who doesn’t want to a cookie bar made with healthier ingredients and takes less than thirty minutes to make?

To make these Blondies you will need:

  • creamy peanut butter
  • coconut oil
  • maple syrup
  • 1 egg
  • vanilla
  • almond flour
  • cinnamon
  • chocolate chips

What’s the best way to serve and store the blondies?

Personally, I love when they are fresh out of the oven and still gooey on the inside. Don’t cut them too soon or they may be a little delicate, but there’s nothing when they’re still warm!

I also love adding a big scoop of ice cream right on top. The cold ice cream with the warm blondie? So delicious!

These blondies can be stored on the counter in an air tight container for a few days, or in the fridge for about a week. They also can be frozen and defrosted at a later date.

Description

Sometimes you just could use a blondie in your life, you know what I mean? Especially when it’s a thick and chewy blondie full of plenty of peanut butter and lots of chocolate chips. Delicious!


Ingredients

Scale
  • 1/2 cup creamy peanut butter 
  • 1/4 cup coconut oil, melted 
  • 1/3 cup maple syrup 
  • 1 egg
  • 1 tsp vanilla extract 
  • 1 1/4 cup almond flour (see notes)
  • 1 tsp baking soda 
  • 1/2 tsp cinnamon 
  • 1/4 tsp salt (if your peanut butter is unsalted)
  • 1/2 cup chocolate chips (or more to taste)

Instructions

  1. Preheat the oven to 350F and line an 8×8 pan with parchment paper.
  2. In a large bowl mix together peanut butter coconut oil, maple syrup, egg, and vanilla until smooth.
  3. Stir in the almond flour, baking soda, cinnamon and salt. Fold in chocolate chips
  4. Bake for 20-22 minutes. Let cool then slice.

Notes

  1. For best results, I recommend aerating your flour: 1: Fluff up the flour in your bag or canister. 2: Gently spoon your flour into your measuring cup. 3: Use a knife to level the flour. (Do not scoop your flour with your measuring cup directly from your bag/canister as this will pack it in and yield too much flour. This method of measuring flour is the best practice for baking unless the recipes notes otherwise.)
  2. I have not tried other flours in this recipe but typically you can use oat flour, gluten free flour, or all purpose flour in replacement of almond flour.

    The taste of these blondies are good but the texture is off. These came out very dry for me. I may try to make them again and aerate the flour next time, as well as not bake for the whole 20 minutes to see if that helps. Overall, this is not my favorite recipe, unfortunately.

      Hi Allie, thank you so much for trying them out and I’m so sorry they turned out a bit dry! Aerating the the flour should definitely help as well as cutting back on baking time, especially if your oven runs hot. I will add the aerating tip to the recipe notes 🙂
