When I polled Instagram asking you all what you would like to see in non-recipe blog posts, one of the most common requests I got was to write a “What I Eat In a Day” post. Now, I’ve personally always enjoyed reading these myself because I think they’re fun and interesting and I always come away with new meal/snack ideas for myself! So I thought it would be fun and hopefully informative to do one myself š
Now I just want to be clear of a few thing before we dive on in! I’m sharing this What I Eat In A Day for meal/snack/product inspo. This is not meant to be any sort of comparison trap because everybody is different and every body is different (see what I did thereĀ š). Heck, my eating habits fluctuate day to day based on so many different factors! Plus I don’t count calories, macros, etc. That all being said, I hope this can give you some inspo and show that eating healthy doesn’t have to be overly complicated.

(This was my day of eating on Tuesday)
So on Tuesday I woke up around 6am and ate a quick Matcha Coconut Bliss BallĀ and drank some pre-workout before heading downstairs to our apartment gym. I always have something to eat before a workout but if it’s first thing in the morning then I usually just want something super small. The bliss balls are the perfect choice because they have a good amount of healthy fat which keeps me fueled for the workout. I’m not linking the pre-workout I’m currently using because if I’m being honest it kind of sucks and I’m just powering through it so that I can buy a different one. If you have pre-workout recommendations, I would love for you to comment below!
I did a low impact weights workout for about 30 minutes and then 20 minutes of incline walking before heading back to our apartment. After a morning workout I typically don’t get hungry for an hour or so just I just drank lots of water and started getting ready for the day.
Around 8:45-9 I started to get hungry so I decided it was breakfast and get to work time! Breakfast was pretty random so I thought it would actually be perfect for this post because I feel like everyone can relate to a hodgepodge random a$$ breakfast! I went for 1 scrambled egg, a No Bake Chocolate Chip Peanut Butter Granola Bar, and some air-fried breakfast potatoes plus my usual morning coffee (not pictured: the shizzzzz ton of salsa I added post-picture to the eggs). Currently I blend my coffee with a splash of coconut milk, sprinkle of cinnamon, drizzle of honey, and 1/2 a scoop of Vital Proteins Gelatin (it’s super good for your gut and makes the coffee soo frothy! Plus it’s tasteless and adds protein).
I started working while I was eating breakfast and then kept at it until around 11:45 when I left to go run some errands. I’m currently working from home (which I will get into more in a later post), but honestly I ate pretty similarlyĀ when I had an office job (just out of Tupperware).Ā
In retrospect I probably would have gone for 2 eggs instead of 1 because I tend to like to eat lunch around 1 and while I was out running errands at noon I was starting to get realllll hungry. Luckily I finished up sooner than expected so when I got home at 12:30 I threw my lunch together. I went for an apple and peanut butter, snap peas and hummus, and an Icelandic Provisions yogurt. Frequently for lunch I tend to go the snacky route because if I eat anything too heavy I feel like I need to take a nap and ain’t nobody got time for that! However, I always make sure I have something with a good amount of protein (yogurt and hummus) and something with a good amount of fat (peanut butter) because I know otherwise I’ll get hungry again super quick which can be annoying when you’re trying to get a lot done.
I got back to work and then since I did eat on the lighter side for lunch, around 2:30-3 it was snack o’clock! For snack I had one of my Apple Crisp BarsĀ that I had stashed in the fridge with a side of coffee. I pretty much always have coffee in the afternoon but usually its not as bougie as in the morning (ha!). Just black coffee, maybe with a dash of honey or coconut milk if I’m feeling it. I’ve contemplating trying to give up my afternoon coffee but…… if I’m being honest it’s probably never gonna happen… especially not if I’m having an apple crisp bar for snack! You simply can’t have an apple crisp bar and NOT have a cup of coffee, you feel me?
I knew it was going to be a recipe photoshoot day which meant I paused on the computer work around 4 pm and started to cook dinner….helloooooo daylight savings and the sun going down at 5:30 pm. Booooo. My Super Creamy Roasted Red Pepper PastaĀ is a fairly quick recipe so I was able to cook it and have it styled and ready to shoot by 5. Once I finished the shoot I wasn’t quite hungry yet (I may be a grandma but eating dinner at 5:30 is still pushing it for me). I decided to go for a stroll around a park near our apartment and get in a little fresh air/podcast time. Anyone else obsessed with This American Life?? Such a good podcast. After I got back from my walk I had the red pepper pasta with some chicken tenders that I had also made for dinner. Not the most attractive picture, but what can I do?
After dinner I worked on editing some photos while having my current favorite dessert aka what my husband calls the “date taco”. A big date stuffed with peanut butter and chocolate chunks…. So. Good! I quickly decided I could use another one so I went for a date taco round 2!
Once I decided to stop working for the day it felt like a little “wine o’clock”. I debated adding this in because obvs wine isn’t a food group (or is it?Ā š), but I decided it needed to be included because it just rounded out the day perfectly. For whatever reason our water glasses are cloudy as all get-out (I promise it’s clean) and I wasn’t about to break out the nice glasses on a Tuesday. Side note: I recently accidentally shattered every single wine glass we own except for threeĀ š¤¦āāļø so there’s that. Well that about wraps up this day of eating, I hope you enjoyed!
